You can literally throw anything in there. Start with your onions and chicken broth as a base. Then the potatoes and other veg. The lentils don't have to be soaked like dried beans. A little rice will make this hearty and filling. A drop or two of steak sauce can add a meaty taste.

Do you have bread? You can use the cheese to make grilled cheese. Or use the tortillas and cheese to make nachos.

Quinoa - I had to get used to the taste but it's supposed to be high in protein. Use it like rice.

Kidney beans - you can mash these or spice them up as a sauce and pour over the rice.

I've been in your situation before in the 1990s. We ate oatmeal for three days while waiting on my paycheck. I saved the milk and eggs for my kids.
