I'm from Louisiana and - my family loves red beans and rice!

I usually make it from dried red kidney beans in the crock pot for 8 hours or so, but for a quick batch, I sometimes use the canned beans and it is still delicious. I grab a pack of smoked sausage (link) for around $3 at Walmart and throw that in a big pot with some chopped onions, some garlic powder, salt and pepper and if you want, a packet of the Great Value gravy mix for 68 cents or so with a little water or if you have a beef bouillon cube, that'll make it taste a little meatier. With the canned beans, it should only take about 30 minutes or so to cook it down and make it really tasty. Pour it over the rice and if you like cornbread, I crumble some in there and the mixes aren't too expensive (I really like the "just add water" kind!). It stretches a pretty good bit and we usually can have it for lunch for a few days after I make a batch. Same thing with the dried mixed beans - Even just half a bag with enough water to cover the beans, some onions, garlic, salt, pepper, gravy mix or the chicken broth - makes a good gravy and great over rice! Stretches a while too.

Hubby picks on me because I love to watch "Chopped" on Food Network, but it actually does sometimes give me some ideas on what to do with the random stuff in my pantry and fridge until grocery day - lol.

We're a family of 4 and I have had to adapt over the years feeding them on MT pay - right now I'm drawing unemployment. Catching meat on sale has really helped us a lot - then you can just kind of build from that with your veggies, etc. Soups, stews, and beans and rice sounds like a great way to stretch all of those ingredients!
