Quick healthy meal ideas

Hi. I am looking for some healthy meal ideas that anyone has tried and can pass along. I have tried a few Paleo recipes and enjoyed them.  Thanks.

I used to be strict paleo when I could afford it and I lost weight. I still cannot eat wheat, so ramen noodles are out for me, so I've been trying to stretch my cheap chicken parts with rice. I know it's not healthy for me and I'm gaining weight, but what else can you do? I'm now flirting with adding beans to stretch the meat even further. I know some think a plant-based diet is more healthy, but I'm only gaining weight on it, but perhaps it's the money stress too.

Anyway as to OP's question, I do sometimes buy canned tomatoes and make like spaghetti sauce, but use zucchini instead of pasta and chicken, and make a big batch on the weekend so all I have to do is heat it up. I stretch this even more with rice. I don't have much time or inclination to cook during the week, so make big batches of stuff on the weekends that just need reheating.

this year was a $6.00 spiralizer from Walmart to make zucchini noodles and it will even make sweet potato noodles. You can just use olive oil and herbs on the zucchini itself and it is great or use a tomato based sauce. My son likes them with a little margarine and takes toasted bread to sprinkle crumbs on top and a tiny sprinkle of parm! Riced cauliflower is good too - you can make pizza crust out of it and it comes out crisp and tasty!

and basically starch. You need to do some research on foods that are healthy but less expensive. You may have to put in a little more effort in preparing meals, though. Look for sales on all types of beans, the largest bags of frozen vegetables you can get for your money, and brown rice that you might have to cook yourself, or not. Seriously, even American chop suey is cheap if you get your pasta on sale, use the ground beef you got on sale, canned tomatoes you got on sale, and throw in some frozen onions and peppers on sale or store brand. You can eat better, but you have to put in the effort. A Ramen noodle only diet is going to kill you.

peppers, onions. You can add in a little ground meat for extra flavor, and grated cheese if you have it. The other option is plain pasta marinara and a salad. I have no problem eating healthy on a very limited income.

I don't eat much bread, but my new favorite occasional treat is mashed pintos, fried plain yellow onions (not breaded), and marinara sauce (or ketchup) on Italian bread or sourdough.

Cauliflower crust pizza. If you like bread crust, - might want to bypass this post. sm

I don't have my recipe handy, but a quick Google search brought up this Paula Deen recipe. This is not exactly quick unless you can prep the pizza sauce ahead of time, or use jarred. I like making a huge batch of low-salt marinara and freezing in 1-cup portions for later. For pizza, cook the sauce until it has thickened. Shredding the cauliflower can be done a little ahead of time also. If you are on the paleo diet, either use an acceptable substitute for the cheese, or omit altogether.
