Looking for a cucumber recipe, not pickles, salads

In the spring, Neighbor gave me 4 plants he grew from seed. Cukes gone wild! I would like to thank him and his wife for the plants by sending a prepared dish with the cukes but stumped as to what. Online search mainly turns up, pickles, salads and soup, plus a few drinks. Any good ideas out there? A refreshing hors d'oeuvres you can think of? TIA. ;

I would take them over something made by you from something else from your garden if possible...the thought being that he probably doesn't want any more cuke anything because he is overloaded just like you with them. If I give somebody tomatoes, the last thing I'd want back is canned tomatoes. So maybe zucchini bread or tomato pie ?? Depending on what you have.

The idea was stuck in my head because another neighbor told me she received lots of zucchini from a coworker, so made 2 zucchini breads and gave one to the coworker. I have lots of basil; know I can come up with ideas for that. Thanks for responding.

As a suggestion for your basil, how about you dry some of it out and put it in some olive oil in a fancy oil bottle or old wine bottle with an oil pouring spout that you purchase from the store and make them basil-infused oil. I'd love that if that were somebody giving that to me. It will last a long time, like your cukes. Have fun!

Thanks for the link. Not sure I will make it for the neighbor, but already plan on trying the Chicken Souvlaki with Tzatziki Sauce recipe found on the same page this weekend. Your linked sauce recipe sounds better to me; will use that one. Thanks for responding.

After peeling and chopping fine, I drain the cukes in a fairly fine strainer for at least an hour. Just let it hang sort of slanted into the sink or a pot. I also use Greek yogurt. Both these things will make for a thicker consistency.

More authentic too. And don't use the low-fat Greek yogurt. You want a creamy consistency. And now I'm craving a meze platter!

This is similar to how I make mine (though I don't use vinegar - I add a squeeze of fresh lemon)

I sometimes go into "authentic" Greek restaurants, and the Tz sauce is watery. Drives me nuts. That's just laziness. Most of the problems pertains to not draining the cukes! Use salt to speed up this process. Next, and not less important, is using Greek yogurt, not just plain old yogurt.

Slice 1/2 to 3/4" thick. Scoop middles of slices to make a well.

In a bowl, mix greek yogurt with feta and a little oregano. Chop and combine Kalamata olives, sundried tomato, roasted red peppers. Add a splash of lemon juice and a little pepper. Use spoons to fill the well. They're pretty, and my family loves them. We have to do a bunch for them to even make it to the table - otherwise we eat them in the kitchen before dinner.

Cut and scoop out inside of cucumber. Fill with tuna salad or don't scoop it out and use deli meat and cheese...just an idea. HTH

Grate the cukes. They will release some water. Add salt to taste, some cumin seeds, some sesame seeds, red pepper powder (optional), some chopped celery or any greens for color. Blend enough all purpose flour to make a soft dough. set aside for 15 min. roll out and either pan roast or deep fry. dip in yogurt or tomato sauce.

This neighbor of mine does this with every vegetable her kids refuse to eat. she sometimes makes coconut chutney to go with it, but regret to say I do not have recipe for that. she calls them parata prefixed by the name of the vegetable that goes into it.
