Looking for some casserole and one pot meal ideas.

My daughter and I moved in with my mom and step-dad and my mom, who is the world's best cook, doesn't want to cook dinner every night of the week, can you believe that?!?!?  Laughing  I mean that's one of the reasons I was so quick to accept her invitation to move in! 

Seriously, I want to help her out, but I work in the office now and so I need some ideas for quick, yummy dinners like casseroles that can be made up the night before and then just stuck in the oven when I get home. 

My step-dad had knee replacement surgery and he hasn't recovered as quick as they had expected.  They have three acres and my mom couldn't take care of the place by herself, so my daughter and I moved in to help out.  My mom is retired and likes to cook, but not every day so I have offered to cook a couple of times a week, but my mom and step-dad can be really harsh food critics, if you know what I mean.

So any ideas would be wonderful!

In foil, you can make a whole meal of pot roast, potatoes, carrots, and onions with a package of onion soup and a little water, not much. Line the foil with parchment first before you put the food in. Pop that in a 350 oven for a 2-3 hours and then uncover to allow to brown for another hour and supper is ready.

You can do the same with chicken. I would cut the chicken up and put the pieces on top of the veggies and the leave the foil open so it can brown. 1-1/2 hours. It's so easy and so delicious and makes the house smell great.

I also like vegetable lasagna with sautéed eggplant, mushrooms, and onions layered with mozzarella and ricotta and red sauce. You can make a couple at a time and freeze.

Then you have papillot, not sure of the spelling, but you can put a bunch of things into parchment and seal it and bake it for 30 minutes. Fish and veggies are good this way. You can do an assembly line and do a lot at one time and freeze the packages uncooked and just pull out when you need a quick meal.

Not sure what the folks like to eat, but baked ziti is a good choice if they like Italian food. You can prepare it several days ahead of time before "the bake."

Just boil up some ziti or penne and drain--make sure it's al dente so it doesn't overcook during the bake process. Place your favorite tomato sauce at the bottom of a baking dish, place the ziti on top of that, add a little more sauce and top with some grated mozzarella cheese. You can bake whenever you're ready.

You have to judge what the family likes, but I like to take some chopped meat, brown it up good in a pan, throw in some onion powder, garlic powder, seasoned salt, pepper, and ketchup. When that's all blended and cooked well,chunk up some yellow American cheese (or Velveeta type), and stir in until smooth. Velveeta type actually works best.

You can serve on a bun (like a Sloppy Joe) or just as is. If you want, cook up some elbow macaroni and toss that in at the end and serve in a bowl for a little more substance.

Forget casseroles! Go for - stir-frys!

Get a rice cooker, too. They are foolproof.

You can make stirfry in a fraction of the time. They are healthier.

I'm a single parent, have 1 kid left at home. I don't want to cook every night either. Here are a couple of our favorites.

Mexican Casserole

1 pound of ground beef
1 onion, chopped
1 can cream of chicken soup
1 can enchilada sauce (may substitute 1 small can tomato sauce mixed with 1 can of water and 1 packet taco seasoning)
1 can pinto beans, drained (may substitute black beans, rinsed and drained, or Ranch Style beans, rinsed and drained.
1 can Mexicorn, drained (optional)
1 eight ounce bag shredded cheese
Flour tortillas
Salt and pepper to taste.

Brown hamburger meat and add onions. Cook until onions are semisoft. add soup, sauce, beans, and corn (if used). Add salt and pepper to taste. Cook about 10 minutes over medium heat. In large casserole dish, cover the bottom with part of meat mixture. Tear up flour tortillas to cover. Cover sparingly with cheese. Repeat layers ending with meat on top and cover completely with cheese. I usually make about 3 layers. At this point, you can put in refrigerator for a later meal. Bake at 350 degrees for about 20 minutes if cooking immediately after making this or about 30 minutes if cooking it from the refrigerator until cheese is melted and bubbly. Serve with salad and cornbread.

SOS
1 pound ground beef
Salt, pepper.
Flour
Water
Worchestershire sauce
Bread lightly toasted or mashed potatoes

Brown hamburger meat and drain. Salt and pepper. Add about 1/3 cup flour and stir constantly until flour is browned. Slowly pour in just less than a quart of water, stirring constantly. This will create a gravy. Add Worchestershire sauce, about a tablespoon or more to taste. Serve over toast or mashed potatoes.

I have a recipe that Im sure your family will love. I actually owe credit for this recipe to the Gooseberry Patch books, in particular Super Fast Slow Cooking. I have done this in the oven as well, so don't just think you are limited to the slow cooker.

CREAMY HERBED CHICKEN:

Ingredients:
4 chicken breasts
1 can cream of chicken with herbs soup.
1 can mushroom soup with roasted garlic (golden mushroom works well to cut garlic taste)
1 packet Lipton savory herb and garlic soup mix
2/3 cup water, add more if too thick.
Rice or noodles, can use stuffing like Stove-Top.

Spray slow cooker with Pam or similar non-stick cooking spray. Place chicken in crockpot (or dish). In separate bowl, mix together soups and water. Pour over chicken. Cook on low for 6 hours or in oven at 325 degrees for 45 minutes or until chicken is cooked through. Serve with rice or noodles, or can serve with stuffing as suggested above.

Sausage and Fresh Green Beans - Angelina

Hillshire Smoked or Kielbasa Sausage cut in bite size pieces with cut up fresh potatoes and fresh green beans. Cook all in one pot. Can cook in slow cooker or can cook on stove top. Just boil until done. Takes only 20 minutes on stovetop and about 4 hours in slow cooker. It is very yummy if made in slow cooker.

Enough to cover, like you would add when you are cooking vegetables. Bring to boil and then just simmer until done, about 20 or so minutes.

Here's a good thing to do. Bread a bunch of boneless chicken cutlets in seasoned breadcrumbs--don't forget to dip them in egg first, or the bread won't stick--sautee them up, and freeze. From there, you can do a number of things with them to mix it up so nobody gets bored with chicken.

1) Milanese: Make a mix of greens on a large plate, along with sliced onion, your favorite Italian dressing and/or balsamic vinegar and oregano. Let that sit a bit to kind of meld the flavors and "wilt." Place a freshly sauteed breast on top of that, and eat. If you'd like, you could crisp up a breast that was sauteed earlier. We put in the toaster oven to crisp it up. It warms and crisps fairly quickly. Just make sure it's defrosted first. Mom or dad can do that while you're at work.

2) Parmesan: Your favorite tomato sauce on bottom of baking dish, cutlets, then sauce and mozzarella cheese. Bake until cheese is melted and sauce bubbles.

3) Sandwiches: Heat cutlet (or not), then serve with whatever. Swiss cheese, lettuce, fresh tomato, ranch dressing. You could put some tomato sauce on a heated cutlet and eat that in a sandwich. A Kaiser roll works best for that.

4) Tenders: These are healthy tenders. Just tear them up (or slice them) and dip in whatever kind of sauce you would dip chicken tenders in.

5) Salad: Slice up and serve cold atop greens and add your favorite salad dressing. Ranch and Italian are my favorite dressings for this meal, but you can put honey mustard, pretty much any other kind of dressing.

6) Use your imagination according to your family's likes. I'm sure there are other ways to use your prepared and cooked breaded cutlets!

Are you in a climate where you can grill this time of year? We like to take chicken or shrimp, marinate it in Italian salad dressing for an hour or so---mom or dad can maybe do that part?--then grill until done. From there, you can eat on mixed greens. Cutlets can be made into sandwiches.

The crockpot could be a great help in this situation for chicken cacciatore, red beans and rice, soups, stews, chicken and dumplings, etc.

There is a website dedicated to using the slowcooker by Stephanie O'Dea where she gives thoughoutful reviews of the recipes tried, it would be worth checking out. If you have a large enough slow cooker, you could make a big, big batch and freeze half for later in the month or the next month.

At onehundreddollarsamonth.com, there are recipes for bulk freezer meals that may be helpful as well. We love stir-fries here as well but I am not always found of all the cutting when I am beat, so you may try cutting up a bunch of the veggies on a day off or depending on the age of your daughter, enlist her help.

For a casserole type dish, do not forget shepherd's pie, make a double batch of filling to freeze for another time.

Make ahead: Check-a-roonie, up to 3 days.

Not 1-pot, but only need 1 skillet to brown the meat and sauté the veggies, and a baking dish. Not *too* bad.

Adjust ingredients to your preference or what is on hand. I never have dark beer, so beef stock to the rescue.

SIMPLE GOOD SUPPER - meatloaf and veggies

i love ground turkey meatloaf. Use any type of meat. 2 lbs meat. flavor with onion powder, garlic, s&p, mustard, bbq sauce, (I clean out the fridge while making my meatloafs so add whatever u might have on hand), worchestire sauce, chili sauce, etc. 2-3 eggs for binding, mix w/ 1c quick cook oats or panko crumbs, or bread crumbs....

free form it on a cookie sheet. two loaves. Toss in oven when u get home from work. 400-45 minutes. serve with roasted fresh veggies. place chopped veggies (such as cauliflower) on 1/2 sheet tray, coat with olive oil and s&p. roast along with the meatloaf.

Do any of you lovely fellow MTs of mine happen to use a meal planner online where you can chose recipes for the week and it will allow you to print a shopping list? My SIL gave me the idea of letting everyone choose a meal for each day of the month, and then she said she only shops for those items for that week.  I thought this was a good idea, but my kids are probably not the best to ask.  They just always eat everything that I put in front of them, but I personally am tired of spagh ...

So left leg starts swelling..Go to doc, rule out DVT said my valves are bad. His answer, take a baby aspirin a day (I look like I have been in a fight Im so bruised) and yesterday at end of shift my leg is tight swollen and my foot.
