Anyone have any good brunch recipes?

Try a strata - wheres_my_job

Ingredients

1 tablespoon olive oil
1 cup chopped onion
2 cups sliced white button mushrooms (8 ounces)
6 large eggs
2 cups whole milk
2 teaspoons chopped fresh thyme plus additional sprigs for garnishing (or ½ teaspoon dried)
½ teaspoon salt
¼ teaspoon freshly ground black pepper
8 slices plain white sandwich bread, crusts trimmed
2 cups grated Swiss cheese (8 ounces)

If topping with bacon, add per serving:

1 slice of thick-cut bacon, cooked, drained, and chopped

Instructions

In a medium saute pan, heat the olive oil and saute the onion and mushrooms until soft, about 5 – 6 minutes. Set aside.
In a medium bowl, whisk together the eggs, milk, thyme, salt, and pepper until well-beaten.
Spray an 8-inch x 8-inch x at least 2-inch deep baking pan/casserole dish with non-stick cooking spray (or grease with butter).
Lay four bread slices on the bottom of the pan.
Sprinkle bread with ½ of the sauteed vegetables.
Add ½ of the cheese.
Pour half of the egg mixture over the top.
Add the remaining four slices of bread in a single layer, then the veggies, then the cheese. Pour the remaining egg mixture over the top.
Cover tightly with plastic wrap or aluminum foil and refrigerate overnight, or for at least three hours.
In the morning, uncover and bake at 325 degrees for about 50 minutes, until the strata is set (it will no longer jiggle in the middle).
Let cool for about 10 minutes, then serve.

My brothers-in-law will make breakfast burritos a lot of times for a brunch-type thing. Something that I have made in the past, is what I call "garbage eggs." I generally take about 18 eggs and whisk them with a bit of milk and then any leftover meat (ham, turkey and maybe a bit of sausage), dressing (depends on the holiday) and any leftover veggies and combine them in a large baking dish with cheese and mushrooms etc. My kids actually loved me making this when they were little and it came about after Thanksgiving when there were not quite enough leftovers to make a meal out of something to feed four people, so I "got creative." LOL.

Another thing that is REALLY good and something that my sister makes quite regularly is to take a turkey breast and roast it in chicken broth and butter as well as DRY ranch dressing -- unfortunately, she has not given me the recipe, but I think you could find it if you do a search for it. It is not done with a whole turkey and only the breast, but it is sooooo good!

Tied up this week w/sick husband. Family has offered to bring sides and I will provide the ham, plus salad, a few veggies. I was amazed at how I loved spaghetti squash, will include this. Couldn't cut it in half but you don't have to so will microwave whole, poke a few holes, turning until soft, then cut in half, scoop and pull out the squash with a fork. You can use butter or marinara. I ate it with no dressing and loved it, sweet and tasty, looks like spaghetti. This is on Dr. Travis Stork's Diet. Have a great weekend!
